The Name of this Masala, You can understand the meaning of it. It is because Kanda means Onion and Lasun Mean garlic used in this masala mostly. Ingredients:

  • 200 gram Dry roasted Kashmiri red chilies
  • 100 gram Dry roasted byadagi red chilies
  • 3 to 4 Dry roasted bay leaf
  • 2 tablespoons Dry roasted cumin seeds
  • 1 tablespoon Dry roasted white sesame seeds
  • 1 tablespoon Dry roasted coriander seeds
  • 1 tablespoon Dry roasted black cumin seeds
  • pinch of Sea Salt
  • 75 grams of desiccated dry coconut
  • 1 tablespoon peppercorn
  • 10 quantity black cardamom
  • 1 tablespoon cloves
  • 1 tablespoon dried lichen
  • 1 tablespoon star anise
  • 1 tablespoon Nagkesar (Cassia Buds)
  • 1 tablespoon asafoetida
  • 250 gram Onion
  • 40-gram garlic cloves
  • 1 tablespoon grated ginger
  • 3-4 tablespoon Cooking Oil

Instructions:

  1. Firstly dry-roast the following ingredients. Take a large nonstick pan and put it on gas, and add byadagi red chilies to it. Dry roast the chillies still the aroma comes out from the roasted chilies. You will have to roast the chilies for 2 to 3 minutes on medium flame of heat on gas. After 2 to 3 minutes remove the byadagi red chilies from the pan and put aside it.
  2. Now Roast Kashmiri chilies also in that pan for 2 to 3 minutes and follow the same procedure.
  3. Now you want to Dry roast the remaining ingredients in that pan or you can use another pan also. Roast all the following ingredients like a bay leaf until it gets slightly golden brown, cumin seeds, Black cumin seeds, coriander seeds, and sesame seeds. Now put all the ingredients aside to cool down for some time and now fry the following ingredients.
    To fry the ingredients, Take one nonstick pan and put it on gas and add 2 to 3 tablespoons of oil to it and put the gas flame medium. Add desiccated dried coconut to that pan and Roast it until it gets slightly brown. When it gets slightly brown then remove the roasted coconut from the pan and keep it aside.
  4. Take another or that nonstick pan and add 2 to 3 tablespoon of oil in it and heat it at medium flame. Add cloves to it and fry it. Fry following all the ingredients also like Star anise, black peppercorn, Dried Lichen, and Cassia Buds. Add black cardamom in it and fry it also. Note that crack the open black cardamom before its frying. Now in the pan add asafoetida and after adding turn off the heat of the gas.
  5. Put the all fried ingredients aside and cool it down for some time. When it gets cool down then fry onions and garlic in another pan.
  6. Now again take a nonstick pan and heat 2 to 3 tablespoon of oil for some time. And fry the garlic until it turns slightly brown. Now add grated ginger in it and fry it also. Fry onions also in this pan until it also turns slightly golden brown in color. Now off the gas and put all aside to cool down for some time.
  7. Now take one mixer jar and put all roasted chilies and spices in it and Grind it as a fine powder. Add 1 tablespoon sea salt and grind in it and mix it well. Now grind again fried spices again into fine powder. Now grind fried onions, garlic, and ginger in one mixer jar.
  8. Now mix all the powder well.
  9. Now your Kolhapuri Kanda Lasun Masala is all-ready.
