Rinse poha, moisten, and let it soften for 5 mins.

Heat oil, add mustard, cumin, asafoetida, and curry leaves.

Sauté onions, potatoes, peas, green chilies until translucent

Add turmeric, salt, mix, then add soaked poha.

Gently combine, cook for a few mins until heated through.

Garnish with coriander leaves, serve hot, optional lemon wedges.
