Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.

Once the seeds splutter, add chopped green chilies, peanuts, and cashews. Sauté until they're browned.

Add poha (flattened rice) and mix well, roasting until it becomes crispy.

Sprinkle turmeric powder, red chili powder, and salt over the mixture.

Add roasted chana dal (split chickpeas) and optional ingredients like raisins or grated coconut.

Turn off the heat and let the mixture cool. Store the Chivda in an airtight container once it's at room temperature.
