Soak mixed beans (moth beans, chickpeas) overnight, then sprout.

In a pan, heat oil, add mustard seeds, cumin, and asafoetida.

Sauté onions, green chilies, and curry leaves until onions turn golden.

Add ginger-garlic paste, turmeric, and Misal masala (spice blend).

Toss in sprouted beans, tomatoes, and cook until tender.

Add water, simmer to form a spicy and tangy curry.

Garnish with farsan (spicy mix), chopped onions, coriander leaves. Serve with pav.
