Prepare chhena by curdling milk with lemon juice or vinegar.

Drain the whey, rinse the chhena under cold water.

Knead the chhena until smooth and make small balls.

In a wide pan, prepare sugar syrup with water and sugar.

Boil the syrup and gently add the chhena balls.

Cover and simmer for about 10 minutes until the balls expand.

Let the rasgullas cool in the syrup, then refrigerate before serving.
