Prepare fresh paneer by curdling milk and draining the whey.

Knead the paneer until smooth, then shape into small flattened balls.

In a wide pan, bring milk to a boil and add sugar, cardamom, and saffron.

Gently add the paneer balls to the simmering milk.

Cook on low heat for about 15-20 minutes until the paneer dumplings are soft and spongy.

Let the Rasmalai cool to room temperature and refrigerate for a few hours.

Garnish with chopped nuts and serve chilled Rasmalai.
