Prepare a thick sugar syrup by boiling sugar and water until it reaches a string consistency.

Roast gram flour (besan) in ghee until fragrant and golden.

Mix the roasted gram flour into the sugar syrup until well combined.

Add cardamom powder and chopped nuts like almonds or pistachios for flavor and texture.

Pour the mixture onto a greased surface and spread it evenly into a thin layer.

Once the mixture cools slightly but is still pliable, cut it into small diamond-shaped pieces.

Allow the Soan Papdi to cool completely before storing it in an airtight container.
